Earlier this week I posted some meals to my instagram feed and I received lots of questions about my lunch – what I call the perfect omelette!
For those who are interested here is the recipe –
- 3 eggs
- 3 slices of ham, ripped up into shreds
- Handful of mushrooms, cut into slices
- 1 medium sized white potato, washed and cut into 1cm slices – keep the skin on!
- Small handful of broccoli cut into small/thin pieces
- Salt, pepper and chilli to season
Pop the slices of potato on to a plate and microwave on full heat for 3/4 mins or until they are soft. Together with the potato, put the mushroom, broccoli and ham into a small circular frying pan with a small spoon of coconut oil (olive oil, fry light- whatever you have!) and fry off until the potato slices are golden. This will also allow the broccoli time to soften as I don’t boil it beforehand. I prefer a little crunch but feel free to boil or microwave the broccoli before adding it to the frying pan if you prefer it softer!
In a separate bowl, whisk three eggs together adding a pinch of salt and pepper. Once the potato is golden, pour the egg over the fried veggies in the frying pan and allow the egg to set. Swish the egg around to make sure it meets all edges of the pan. At the same time, I season with a touch more salt and pepper and sprinkle across some dried chilli flakes for a little kick! Fresh chilli would work just as well.
I finish mine off under the grill to ensure the top of the omelette is cooked through and not runny – Yuk! This should take only a few minutes and then it’s ready to eat!
All together it takes around 25-30 minutes from preparation to plate but it is well worth the wait!
I’ve previously made so many different variations of this meal, mainly using up old veggies or whatever the hell is lurking in my fridge, but this is my favourite! Other ingredients that work well include chopped up onion, garlic, sausage, bacon, asparagus and spinach! Even a little sprinkle of cheese maybe…
