Healthy banana muffins


Whoever said you can’t enjoy healthy is wrong because these are just incredible!

In a bid to get my body back on track after having Isla I have been trying to satisfy my sweet cravings with some healthy treats and I found these amazing muffins. They are so easy to make, only take 10 mins to prepare and are far too tasty not to share the recipe!


  • 1 cup of soft dates
  • 2 eggs
  • 2 banana’s
  • 1 tbsp chia seeds
  • 2 tbsp of coconut oil
  • 1 cup of ground almond
  • Half a cup of mixed seeds
  • 1 tbsp of baking powder
  • 1 tbsp of cinnamon
  • Pinch of salt

I’m sure I’m not the only one but I bloody love a recipe that doesnt require a set of scales!

Blend together the cup of soft dates, eggs, bananas, chia seeds and coconut oil, I used my Nutri-bullet for this which worked a treat.

In a seperate bowl, add the cup of ground almond, mixed seeds, baking powder, cinnamon and salt. Now mix all the ingredients together and top with slices of banana and a squeeze of honey.

Bake on 160 degrees for 30 mins.

Mine look slightly burnt because I got distracted by Isla fitting her entire fist in her mouth! Who knew that was even possible…
