Easy Turkey Bolognaise
Since sharing a post about my postpartum body, I have received alot of messages about my diet so I thought I would would share with you a meal that I eat quite frequently at lunch time – it’s easy to prepare, tasty, healthy and good if you haven’t got much time!
The reason why I have chosen to share my lunchtime meal is because it’s the trickiest meal time for me and I wonder if this is the case for most other mums and busy people too.
My breakfast is easy because it’s simple and quick and I usually eat it whilst Isla is having her morning nap. Dinner is not as quick as it’s more complex and consists of a variety of ingredients but James is on hand to help and it’s less stressful than trying to entertain Isla and cook at the same time. Trying to do an impression of the crazy frog whilst chopping onions isn’t advised!
Lunchtime however is a whole different battle and I imagine I’m not alone in this struggle! Isla is usually mid way through her mad hours and is requiring some kind of entertainment which makes finding 30 mins to prepare, cook and eat a meal quite a challenge. I’ve never been a big sandwich fan and have always needed something substantial for lunch (hats off to my mum for 3 course lunches all through school) and that’s where I discovered this meal and it’s worked wonders for my routine.
I usually buy a few 450g packs of turkey mince at a time and freeze them until I am ready to use them. It’s more convenient and saves a last minute dash to the shop! I always choose turkey mince over beef mince as it contains less fat.
I always defrost a pack on a Sunday morning and cook it Sunday evening whilst James is at home to keep an eye on Isla. I then leave it to marinade overnight until Monday and it’s ready to eat through until Wednesday.
Marinading it overnight is so important as it really increases the taste and it’s a lot nicer than if it where to be eaten straight away.
450g pack of lean turkey mince
400g tinned tomato’s
1 green pepper
1 white onion
1 fresh garlic clove
Few pinches of salt
Few pinches of pepper
1 teaspoon of mixed herbs
Pinch of dried chilli flakes (this is optional but I add it for a little kick)
4/5 lashings of Lea and Perrins worestershire sauce
Whilst chopping the onion, pepper and garlic into small chunks, fry off the turkey mince in coconut oil until browned off. Add the onion, pepper and garlic to the mince and sauté for 2/3 minutes until soft.
Pour in the tinned tomato’s, mixed herbs, salt, pepper, chilli and worcestershire sauce and stir. Leave to simmer on a low heat for 20/30 minutes depending on how much sauce you would like.
I sometimes add in any veg that needs using – mushrooms and spinach work great – like the picture above!
Once cooked, leave to cool and add to a dish which can be refrigerated. Once the bolognaise is room temperature, put it in the frigde and leave it to marinade overnight.
Heat it through thoroughly the next day and serve with some greens – I like mine best topped with some salt and pepper asparagus.
This meal takes 7/8 minutes at the most from the fridge to eating and it’s so delicious but please make sure its pipping hot before eating!
If I have exercised prior that day to having this meal for lunch, I will eat it on a bed of rice or pasta. Yum!
